Fluffy Pancakes Anyone?

Today I made a double batch of pancakes. I always make a double batch tho. I made them cause school is back in an my boy walks to and from school. It's one mile one way. And sometimes he likes to have a snack because he's not totally hungry after getting up and ready in the mornings. So I figured if I made pancakes he could carry those for an easy snack if he gets hungry on his way to school. Anywho, I've decided to share my pancake recipe with y'all. I hope you enjoy it as much as we do!

Oh boy they look so yummy! Right? Well, me and my boys like them. Even better with a little pure maple syrup drizzled on top. My boys also have them with peanut butter. Something I did growing up and of course I showed my kids how to do it. If you haven't tried it, do! It's so good.


I whisk together all the dry ingredients first.
FLUFFY PANCAKES
1 1/2 cups flour (I use an equal part of unbleached white flour and whole wheat flour)
3/4 tsp. salt
2 tsp. baking powder
1 Tbsp. ground flaxseed
1 Tbsp. Sucanat* or brown sugar


Then I stir in 3 Tbsp. unsweetened applesauce, made without crap of course, like no high-fructose corn syrup! After I stir in the applesauce I add 1 1/4 cups plain plant milk and 1 tsp. vanilla extract. Mix this well and make sure the griddle is heating up.


I set the griddle to 375 degrees and wait for the green 'go' light.
I use a 1/4 cup scoop to make my pancakes. It make the perfect size.


Let the tops get some bubbles on them before flipping.


Flip and let the other side cook for a little while. They are so soft and fluffy! I'm telling you, you won't miss the animal ingredients. For blueberry pancakes, just sprinkle some on top after putting it on the griddle. Or you could just add fruit before eating, like me. I add sliced banana, strawberries and blueberries before drizzling on maple syrup. Oh so good!!


Enjoy these whenever! Breakfast, lunch, dinner, snack, dessert.....anytime you want to munch.
But don't forget to make sure the peanut butter is also all natural with the only ingredient being peanuts! And using real maple syrup and not the fake shit they say taste like maple syrup. You want something that taste like maple syrup then eat the real stuff.....hello!!

*Sucanat: short for sugar cane natural. It is made by extracting the juice from sugar cane, heating it up, letting it cool and beating it with paddles to form granules. It's less processed and more natural than white sugar and still retains it's natural molasses. No chemicals are used to process sucanat. Because it still has it's natural molasses it contains vitamins and minerals that white sugar is stripped of. Can be found in most grocery stores and health food stores.
