I got this recipe from my Uncle Jim and Aunt Sally. I have altered it, like I do with most recipes. I will give you the way I do it and then give you the way the recipe calls for it to be done. Enjoy!
First I start with one of those freezer bags of chicken I processed in the food processor (in a past post) and a freezer bag of chicken broth. Thaw both. Put the broth in a pot and add water. This will be used to boil the pasta. Chop a bell pepper and an onion (I use the pre-chopped frozen onions) and saute in 6 tbsp. butter/margarin (I use the brand Imperial - only .98 for a package of 4 sticks). Add the can of diced tomatoes, jar of pimentos, can of cream mushroom and the velveeta type cheese. It also calls for a can of mushrooms, but I think the cream of mushroom was enough mushrooms (the kids and I are not fans of mushrooms). This meal cost under $10 and we have enough left overs for a second meal. So that would actually break down to about $5 for dinner for a family of 4.
The first pot in the picture is the broth and pasta. The other pot is the bell pepper and onion in the butter/margarin. Once you add the other ingredients to the sauteed peppers and onion you have this cheese chicken sauce. When the pasta is done add it to the sauce (don't forget to save the broth). Done!
The second picture of the finished meal is the left overs. I remembered to take a picture after we had already eaten. So you can see how we easily got two dinners out of one $10 meal. Not bad!
The broth left over will be used to make a veggie soup (coming soon).
Chicken Spaghetti
3 large chicken breasts
1 bell pepper, chopped
1 onion, chopped
1 can diced tomatoes and chilies
1 small can mushrooms
6 tbsp. butter
1 lb. velveeta cheese
1 small jar pimentos
1 can cream mushroom
16 oz spaghetti noodles
Boil chicken in water. Chop into bite size pieces. Saute onion and pepper in butter. Cook the spaghetti noodles in the water you boiled the chicken in, drain when done. Add sauteed onions and peppers in noodles. Stir in remaining ingredients and mix well. Heat through.
