This recipe is such a big hit in my house. My boys aren't fans of soup. But the first time I made this soup my son ate 4 bowls!! I make it often and to this day we still love it.
Chop an onion, carrots, celery and some garlic. Sauté them in a large pot. LARGE. This barley fits in my biggest pot. Just make sure you use a very large pot or it could overflow.
I don't use oil in my home for cooking or eating, period. So to sauté use water or even oil free veggie broth. Add a little at a time to prevent sticking. Using a lid helps keep it moist also.
Once the veggies are slightly soft add the next ingredients.
The next ingredients are chopped fresh tomatoes, veggie broth and Bragg's liquid aminos. I prefer Bragg's, no add crap, but you can use soy sauce if that's what you have and/or prefer.
Let all that cook for a bit. I don't time how long I cook things. I go by look and smell. When it's all nice and boiling hot, add the veggie ingredients.
The veggie ingredients are cauliflower, zucchini and two greens. I can't remember because I add what I have. This time I had green cabbage and Napa cabbage. I think the recipe calls for kale and Swiss chard. But that's what is so wonderful, use what you have. One time I used red cabbage and kale. You can even use bok choy. Heck, if you don't have two different ones on hand, use a larger amount of one green you do have. Don't stress over it.
Cook until the veggies are just slightly tender. It's looking good I know! You're almost done.
Finally add a small amount orzo pasta. I haven't tried it yet cause we just really like the orzo, but you could use rice, barley or quinoa if you don't have orzo. Now just let it cook until the pasta is done. When they are done add some basil. Now you can dig in! But it will be molten lava! If you can let your bowl cool down a bit you are better than we are.....hahahaha.
That's all there is to it. A lot of wonderful flavors and so many veggies! You can eat as much as you want! If there is any leftovers I have it for breakfast! Yep....love it!
