I found a recipe on how to make home made corn dogs. It was something about getting a box of corn muffin mix and other things, dipping the hot dogs in the batter and frying them. It just seemed like too much. Plus we don't fry, makes too much of a mess I don't like to clean up. Also, I like my own corn bread recipe. So I tried this. Easy and yummy....
Mix up the corn bread recipe (below). And using a small scoop fill mini muffin pan. Make sure you spray the muffin pan with cooking spray.
Then cut a hot dog into 6 pieces. Place one in the center of each muffin. This will use 4 hot dogs and makes 24 mini muffins.
Bake and enjoy!!
Corn Bread
1 cup flour
2 tsp baking powder
1/4 cup sugar
1 cup yellow cornmeal
2 eggs
1 cup soy milk (I use Silk)
4 tbsp oil
Combine the dry ingredients together. Beat the eggs with the soy milk. Add the egg mixture to the dry mixture and stir. Add the oil and mix well. Bake at 350 degrees for 30 minutes.
