This is called 'Costa Rican Potatoes and Beans' and it's delicious! I gave it a go in the Cosori and it did change the original taste/flavor but it was still yummy. From this tho I am learning to change the spices/seasonings to work with cooking in the Cosori.
Ah....chili. The only person I know that doesn't like chili is my son! But hubby requested it and because we have been getting below 40's here in Florida I made it. Seemed right. I threw it all in the Cosori and it turned out yummy.
I love soup! Could live off of it I'm sure. But my boys...not so much. When I make this it's usually just for me. Hubby is starting to come around a little (or maybe he was just hungry...lol) This is a recipe I've found and altered it to suite my tastes. Potato and Green bean Soup.
Of course this I made for New Years! Gotta have black-eyed peas for New Years. It's a tradition. I have never made them from dry beans. I just use to buy a can, heat them up and eat them on New Years. But having the Cosori I bought dry beans and gave it a try. Amazing!! I couldn't stop eating them! Honestly, these beans are SO much better made form dry! Hubby doesn't like them and would eat a few bites and our son would eat 1 bite (like I said, tradition! They HAVE to have a least one bite of these beans on New Years 😉) This time tho hubby ate a lot more of these beans! Logan, of course, still only ate his one bite.
Pasta with marinara sauce. Or as some people call it, pasta sauce. I make homemade sauce but you don't have to. Just throw it all in the pot and let it do it's thing. Dry pasta and all! Yep. I put in all the sauce ingredients then added the dry pasta with the same amount of water as pasta (i.e. 12 oz package of pasta, use 12 oz of water). This took less than 10 minutes of cooking time. Now don't mistake that for total time! With a pressure cooker you have to give it time to build pressure (could take 10+ minutes). Then it starts it's cooking time, in this case under 10 minutes. Finally, it has to de-pressureize, so about 10 minutes. It probably could go a little faster if once it was done cooking I hit the release valve to do a fast pressure release, but I prefer the natural release method which is to let it sit for about 10 minutes after it's done cooking. I get meals going early enough so by the time the food is ready it's time for dinner....it's all in the timing! (hehehe)
This lovely dish is called Mexican Quinoa. Surprisingly hubby liked this. So next time I made it -yep- I made it in the Cosori. Came out just as lovely.
Oatmeal. I had to try oatmeal in the pot. I like oatmeal but found out not made in the Cosori. I like my oatmeal hardy! Not pasty (what others call creamy). It's not 'creamy' at all to me. It's like a glop of goo and pasty is all that comes to mind. So I'll continue to make this food on the stove. Now I may have better luck using steel cut oats. Not sure if Imma give that a try tho. We'll see.
Mushroom Stroganoff. Sooo yummy! My boys eat the hell outta this! Again, all the fixin's went into the pot along with the dry pasta with an equal amount of water.
Our pressure cooker also has a veggie and potato steam option. Whoot whoot. Not feeling like doing much (which cooking with a Cosori isn't doing much at all so....guess I was super lazy this day). I just steamed some potatoes. Top them with whatever you like - bbq sauce, salad dressing, salsa, ketchup, mustard, all the above...whatever. I topped mine with salsa.
One thing I have found the Cosori to be so useful and wonderful is making my not-dogs...aka: carrot dogs. Cooking these in the Cosori was SO much better in all ways!! The long process of making this food just became the most simplest and I love it. See with making these you have to peel, cut and wash the carrots. Then boil them until tender. Then let them marinade in the sauce for 1-2 days. Then (I know...see how long...all these 'thens' is crazy) cook them again to heat them up by choice of pan, pot or grill. Now I just peel, cut and wash my carrots - which is what is to be done regardless of what you're gonna use them for. Throw the raw, prepped carrots with the marinade sauce in the Cosori and in 2 minutes....that's right! I said 2 minutes cook time, they are done!! Love it!! And so do the boys cause I didn't make these a lot due to the long process. Now I can make them as often as the boys want them!!
Here I was trying to make something with red curry paste. Logan has been asking for a red curry dish. I don't have any (will have to change that shit). So I got a small jar of red curry paste at our local Asian market and tried to figure something out! I used rice, veggies of choice, some plain plant milk and of course some of the red curry paste. All in the Cosori...duh. I think I can work on this and make it better but my boys raved over it saying it was perfect. Yeah, I'll still play around with it tho cause that's how I roll.
There ya go. What I've cooked so far in my Cosori Pressure Cooker. So well worth the cost to me and the food comes out more flavorful and good. They do say pressure cooking also retains more vitamins and minerals in food than any other cooking method! So there's a plus too.
